Spinach Chaat
Palak Ke Patto Ki Chaat
The spinach leaves(Palak Patta) are coated with gram flour, spices and then deep-fried till crisp golden. This crispy palak patta is then topped with sweet curd, tangy tamarind chutney and fresh green chutney and sev or aloo bhujiya, The mix of these different flavors so interesting in this chaat that it can rule your chaat craving forever.

Ingredients
- Baby Spinach Leaves 8 - 9 washed
- Besan 1/2 cup
- Rice Flour 2 tbsp
- Turmeric Powder 1 tsp
- Red Chilli Powder 1/2 tsp
- Asafoetida 1 pinch
- Water as required
- Salt as required
- Oil for frying
- Curd 3 - 4 tbsp
- Rock Salt s required
- Cumin Powder 1 tsp
- Sugar Powder 1 tsp
- Green Chillies 1 -2 chopped (opt)
- Chaat Masala to sprinkle
- Fresh Coriander Chutney
- Tamarind Chutney
Directions
- In a mixing bowl, add besan, rice flour, turmeric powder, red chilli powder, asafoetida, salt now gradually add the water and make a thick and smooth paste of it.
- Now heat oil in a kadhai/pan and dip the spinach leaves in the batter and place them in the hot oil.
- Fry them in batches till golden brown and crisp. drain on kitchen tissue to remove the excess oil.
Preparation of Chaat
- In a small bowl add sugar in the curd mix well and keep aside.
- On a serving plate, place the fried spinach pakoras, top with the sweet curd, fresh green chutney, tamarind chutney, cumin powder, rock salt and chaat masala, and garnish with fresh coriander leaves. It's ready to serve!!
