Veg Manchurian
If you think of a popular Chinese veg delicacy, the first thing that comes to your mind is "Veg Manchurian". Mouthwatering fried veg balls dipped in the spicy, tangy sauce can be consumed as a starter or as a side dish with any Chinese main course. It is best complemented with both Hakka noodles and fires rice.
Though there are various ways to cook this all-time favorite Chinese dish. but I have kept it a simple and quick method to cook hopefully you will find it the same way.

For your convenience, I have divided the recipe into two easy steps.
Step 1 - Making Manchurian balls
Step 2 - Making sauce.
Ingredients: for Manchurian balls
- Cabbage 1 cup finely chopped
- Carrot 1/2 Cup finely chopped
- Onion 1 medium size finely chopped
- Green chillis 2 -3
- Ginger 1 inch grated
- Cornflour 3 - 4 tablespoon
- Baking Powder 1 teaspoon
- Oil 1 Cup
- Salt as per taste
Ingredients: for Manchurian gravy
- Oil 2 tablespoon
- Garlic 8 -10 cloves finely chopped
- Ginger 1 inch grated
- Green chillis 2 -3
- Onion 1 medium size finely chopped
- Capsicum 1/2 cup
- Spring Onion chopped
- Red Chilli sauce 1 tablespoon
- Soy sauce 1 tablespoon
- Vinegar 1 tablespoon
- Black pepper 1/4 teaspoon
- Cornflour 1 tablespoon
- water/ vegetable stock 2 1/2 cup
- salt as per taste
Cooking Manchurian Balls - Step 1
Add all the vegetables in a bowl, add cornflour, green chilies, ginger, and salt mix them well and gather the mixture knead them in a way so that veggie in the mixture leaves the water and form a dough-like mixture. Take a small portion of the mixture and make round veggie balls.
Heat the oil in a frying pan and fry all the balls in medium flame. Put them aside on a kitchen towel and allow them to shed excessive oil.
Making Sauce - Step 2
Take a small bowl and all the three sauces and vinegar and mix them well and leave them aside, take cornflour in another bowl two tablespoons of water. Heat the oil in a pan on medium flame then add ginger, garlic, and green chilies saute them for a minute, now add onion and capsicum cook them for two minutes add salt. Add sauce mixture and stir it well then add water/veg stock allow them to cook till it comes to a boil. Add cornflour in small quantity while stirring the sauce, simmer till the Manchurian sauce thickens, cook the sauce 6-7 seven minutes.
Now add already cooked Manchurian balls to the sauce prepared garnish them with spring onion, serve it with your favorite Chinese dish.
Quick Kitchen Tip :
Add Baking powder while making Manchurian balls, it will make them softer and spongy
.
