Often known as King of all the Halwa, the Gajar ka Halwa is one such delicacy that is mostly cooked during the winter season, It is purely an Indian Dish prepared with carrot and milk with dry fruits and fruit essence in it. Grated Carrots are mix with sugar/jaggery milk/condensed are the core ingredients of this dessert.

Because of its low-fat content, it is very popular all over India and cooked in different ways, but basic ingredients remain the same and variation is always encouraging. No winter in India is complete without "Gajar ka halwa'

  • Preparation Time 20 - 25 mins
  • Cooking Time 40 -45 mins

Ingredients

  • Carrot (gazar) 1 kg (grated)
  • Full Fat Milk 1 1/2 cup Ghee 4 - 5 tbs (1/2 cup)
  • Cardamom Powder 1 tsp
  • Sugar 10 -12 tbs (as to taste)
  • Mixed Dry fruits

Method

Heat Ghee in a thick bottom pan add grated carrots and saute for good 4 - 5 mins this is a very important step, it will give gazar a beautiful color and glossy look, after 4 -5 mins add milk and mix it well cover with a lid and keep the flame low. Keep on stirring in between. The grated carrot will cook in the milk and slowly milk will start to reduce and evaporate. After 15 - 20 mins when the milk is reduced to 80 % add sugar and cardamom powder to the mixture. Mix well and continue to simmer and cook on low flame.
Keep on stirring in between. Towards the end, add dry fruits, keep on stirring till the milk is completely reduced turn off the flame. Gazar Ka Halwa is ready. Serve Hot!!

King of dessert Gajar ka Halwa is all time favorite dessert mostly cooked during winter when there is abundance of freshly harvested carrot. It is low on fat and high on taste


Instant Kitchenette Tip

  • Use good red juicy gazar for making halwa.
  • If you will use full-fat milk you will not need khoya for this recipe because reduced milk will turn into khoya itself.
  • You can use dry fruits of your choice.
  • If you want to use condensed milk add it with the sugar just reduce the quantity of sugar as per your taste.
  • You can use jaggery powder/ brown sugar if you want to.
