Methi Malai Matar
Methi or Fenugreek leaves that is a common crop during winter, green leafy saag of Methi is cooked in various ways. Methi has it's own health benefit best known for its soluble fibre help in constipation other benefit include controlling blood sugar level etc.
Methi Malai Matar is the combination of Methi and Matar(Peas) in thick creamy gravy. This recipe has flavour of mild spices although methi leaf has a bitter taste in this recipe spices and rich creamy gravy balance them well. This dish is best enjoyed with traditional Indian bread e.g. Paratha, Butter Naan, Lachcha or even with Rumali roti.

Ingredients
- Methi 2 cup ( washed and chopped)
- Green Peas (Matar) 1 cup
- Ghee 2 - 3 tbs
- Onion 2 ( roughly chopped)
- Tomato 2 (roughly chopped)
- Ginger 1 inch (roughly chopped)
- Garlic 8 - 10 cloves
- Cashew 8 - 10
- Water (Warm) 1/2 - 1 cup
- Turmeric Powder 1 tsp
- Red Chilli Powder to taste
- Coriander Powder 2 tsp
- Garam Masala 1 tsp
- Green Cardamom 2
- Bay Leaves 1 -2
- Cloves 3
- Cumin Seeds (jeera) 1 tsp
- Sugar 1 pinch
- Salt To taste
- Fresh Cream / Malai 1/2 cup
Method
- In a pan / Kadhai heat 1 tbs of ghee add methi leaves and matar, saute for 7 - 8 mins, keep aside for later use.
- Now in the same pan add ghee, onions, ginger, garlic and saute till it turns golden brown.
- Add tomatoes and cashews and cook for another 4 - 5 mins
- Add water if requires, turn off the flame and bring it down to room temperature.
- Now add everything to a blending jar and make a smooth paste. Strain to make it more smooth, and keep aside.
- Heat the same pan add ghee, add cardamom, cloves, cumin seeds, bay leaves saute till it turns aromatic.
- Add the ready onion masala paste to the pan mix well, then add turmeric powder, coriander powder, red chilli powder, a pinch of sugar and salt to taste cook for 4 - 5 mins.
- Add sauteed methi and peas mix well and adjust the consistency by adding warm water, cover and cook for 4 - 5 mins.
- Add fresh cream and garam masala mix well and cook for another 2 - 3 mins. Your Methi Malai Matar is ready, Serve Hot !!
