Quick & Easy Stuffed Gobhi Ke Parathe

Gobhi ( Cauliflower ) Ke Paratha

Parathas are the Roasted chapatti either in ghee/ oil sometimes in butter, Sometimes these parathas stuffed with different ingredients. The Parathas are also stuffed with Gobhi or Cauliflower, Today I am going to share the quick and easy recipe of Gobhi ka paratha. Gobhi ka paratha is a must-try recipe for winters, almost the whole of north India during winters make these parathas at their home. Best enjoyed with Curd/ raita, green chutney, and pickles. It is Brunch delight.

Ingredients

  • Gobhi (cauliflower) 2 cup (grated)
  • Onion 1 big chopped
  • Green Chillis 3 - 4 chopped
  • Fresh Coriander 3 - 4 tbs
  • Ginger 1 inch chopped
  • Amchur Powder 1 - 2 tsp
  • Garam Masala 1 tsp
  • Whole Wheat Flour 2 cup
  • Carom Seeds 1 tsp
  • Salt as required
  • Water for kneading dough (as required)
  • Oil/Butter for Roasting and Kneading dough

Method

To start this recipe take a mixing bowl add whole wheat flour, carom seeds, 1 tbs of oil, salt to taste, and knead a soft dough. Keep the dough aside. 
Take another mixing bowl grated gobhi, add chopped onion, green chilies, ginger, fresh coriander, amchur powder, garam masala, and salt mix everything together. Now here you can leave the mixture as it is for 5 mins and after that, you can squeeze the water and start making the parathas but no matter how quick you are gobhi will start releasing water again.

East Stuffed paratha of cauliflower is winter delicacy, it is best enjoyed on winter morning brunch or sometime in Lunch/ dinner.
Now here comes my twist heat a pan/ kadhai add gobhi mixture to the pan and dry roast it for 4 - 5 mins and turn off the flame. Now let the mixture cool down. Your stuffing is ready for making paratha. Take a small portion of dough make it round and flat in shape from the edges keeping the middle portion thick. Now take a generous amount of the gobhi stuffing in the middle section of the flat dough and wrap it from the edges so that all the stuffing should be inside. Now make a nice ball shape and sprinkle some flour dust on it and roll out the dough into a nice flatbread just like chapati.

Heat a Tawa and roast it with oil/butter, like any other paratha. Your Gobhi stuffed paratha is ready. Serve it with pickle and curd.

  • You can add Achhar Masala (Pickle Masala) in the stuffing mixture to enhance the taste.
