Tamarind Rice
Rice is the main source of diet in the Asian country, consumed in many ways and flavourful variation rice diet is not only filling but also healthy and keep our body cool during hot sultry days in summer. One such variation is 'Tamarind Rice' it is tangier, tastier and easier to digest.
Recipes of Tamarind rice is easy to cook, once you start cooking it at your home, you will be tempted to repeat it every week, may also carry it as a lunchbox. This Rice preparation is quite popular in south India and gradually adopted all over India. With so many South Indian IT professionals around the globe, you won't be surprised if you find any western having 'Tamarind Rice' in Lunchbox.

Ingredients
- Basmati Boiled Rice 2 cups
- Tamarind Juice 1 cup (2 - 3 tbsp tamarind pulp mixed with 1 cup of water)
- Chana Dal 1 tbsp
- Fenugreek Seeds 1/2 tsp
- Mustard Seeds (methi) 1/2 tsp
- Dried Red Chilli 2 - 3
- Curry Leaves
- Asafoetida 1/2 tsp
- Peanuts 4 - 5 tbsp
- Cumin Powder 1 tsp
- Coriander Powder (opt) 1 tsp
- Green Chilies 2 - 3 chopped
- Turmeric 2 tsp
- Sesame Seeds 1 tbsp
- Salt to taste
Directions
- Heat the oil in the pan add peanuts first and start roasting them as they take longer to roast then add chana dal roast for 2 mins now add dried red chilies, mustard seeds, and fenugreek seeds and roast them properly on medium flame.
- Add curry leaves, chopped green chilies, asafoetida, turmeric powder, and saute them for few seconds.
- Then add the tamarind juice to it and the dry masalas red chilli powder, coriander powder, cumin powder and let the gravy cook for 8 - 10 mins or it separates the oil.
- Meanwhile, roast the sesame seeds and crush them, and once the gravy is ready add the powder to it and cook for another 2 mins.
- Check the seasoning and add the salt.
- Now add the cooked rice to the gravy mix well, your Tamarind Rice is ready!!
Instant Kitchenette Tip
- You can add Jaggery to balance the flavors.
- You can make the gravy ahead of time and store it in the refrigerator and mix it with cooked rice whenever you want.
- You can completely skip dry masalas like cumin powder, red chilli powder, and coriander powder they are completely optional.
- Do not skip turmeric because it gives a good color to tamarind rice.
