Teekhe Ka Tadka
Green chilli instant pickle is also known as Thecha in western/central India, while rest of India call it Hari Mirch ka achar, these pickles are great compliments to various Indian cuisine such as Paratha/stuffed Paratha, Khichadi, Puri sabzi etc. The primary ingrediant being chilli peppers so you can understand the hotness of this recipe while lemon juice balance quite a bit of hotness, but it still remains HOT.
So when your homecooked food is little less flavourful and mild in term of taste do add a small quantity of "Teekhe Ka Tadka" in it and make your plate as delightful as ever.
Thecha
- Preparation Time 5 mins
- Cooking Time 10 mins
Ingredients
- Fresh Green Chillies Whole 150 gm (washed)
- Garlic Whole 1/4 cup (peeled)
- Cumin 1 tbs
- Mustard Oil 1 tbs
- Salt to taste
Directions
- Fry on high heat until blistered.
- Keep string at regular intervals.
- Remove the chillies from flame once they blistered.
- In the same pan add oil, add garlic roast for 3 - 4 mins.
- Remove from flame and keep aside.
- Let everything cool down for 5 - 6 mins.
- Now add green chillies and garlic to a large mortar and pestle and make a coarse paste. you can also use a mixer grinder for this.
- Add salt to the mixture. Thecha is ready to serve!!

You can also add a tempering of hing to thecha to enhance the flavour.
Quick N' Easy Green Chilli Pickle
Preparation Time 5 mins
Cooking Time 15 mins
Ingredients
- Fresh Green Chillies 150 gms (chopped)
- Mustard Seeds 1 tsp
- Cumin Seeds 1 tsp
- Asafoetida 1/2 tsp
- Methi Seeds 1 tsp
- Turmeric Powder 1 tsp
- Dry Mango Powder 2 tsp
- Mustard Oil 2 tbs
- Salt to taste
- Rock Salt to taste
Directions
- Heat a pan add mustard seeds, cumin seeds, methi seeds, asafoetida and dry roast for 4 - 5 mins.
- Add rock salt, salt, turmeric powder, and dry mango powder to the hot pan and let it cool down.
- Make a powder out of this mixture.
- Add this powder to the green chillies and mix very well.
- Heat a pan add 2 tbs of mustard oil and heat it till it becomes smoky, add this oil to the green chillies. Your Quick N' Easy Green Chilli Pickle is ready!!

Instant Green Chilli Pickle

- Fresh Green Chillies 50 gms ( 1/2 cup chopped)
- Fresh Lemon Juice 5 tbs
- Ginger 1 inch Julian
- Salt to taste
Directions
- Take chopped Green Chillies, add julian ginger, add fresh lemon juice, add salt mix all together.
- Make sure that all the chillies are completely dipped in lemon juice.
- Keep in sunlight for 1 - 2 hrs. Your Instant Green Chilli Pickle is ready. (Consume it within 3 - 4 days)

- You can also add garlic cloves to this instant pickle.
