Adraki Gobhi is marinated cauliflower with the dominance of ginger flavour, This recipe is quite common at North Indian household kitchen, It taste heavenly due to abundance of ginger and other aromatic spices. This seasonal main dish is served at parties and get-together.

Ingredients

  • Cauliflower  500 gms cut into florets
  • Oil  2 - 3 tbsp
  • Cumin Seeds  1 tsp
  • Asafoetida  1/2 tsp
  • Green Chillies  2 - 3 cut into half
  • Tomato 1 big chopped
  • Ginger 1 inch grated/ finely chopped
  • Turmeric Powder  1 tsp
  • Coriander Powder  2 tsp
  • Red chilli powder 1 tsp
  • Dry ginger powder 1/2 tsp 
  • Garam masala 1/2 tsp
  • Salt to taste
  • Fresh Coriander and Julian Ginger for garnish
  • Lemon Juice 1/2 tsp

Directions

Ginger flavored  cauliflower marinated with traditional spices, recipe is tasty and easy to cook
  • Heat oil in pan/kadhai add cumin seeds, asafoetida, green chillies and saute for few seconds till it turns aromatic.
  • Now take a bowl to add turmeric powder, red chilli powder, coriander powder, 2 tbsp of water and make a paste of it.
  • Add this masala paste to the pan and let it cook on medium to low flame till water reduces to half.
  • Now add grated ginger and saute again for few seconds.  
  • Add cauliflower florets to the pan, add salt, dry ginger powder give a stir and cover the lid for 5 - 7 minutes on low flame.
  • After 5 - 7 minutes open the lid and add chopped tomatoes cover the lid again just for 2 - 3 minutes.
  • Now open the lid add garam masala and roast it for 2 - 3 minutes on medium to low flame, and turn off the flame.
  • Add lemon juice, chopped coriander, and garnish with julian ginger. Adraki Gobhi is ready to serve !!

Instant Kitchenette Tip

  • Always keep cauliflower florets in saltwater (1tsp salt and water) before cooking.
  • You can also add onion to this recipe I made it completely Jain ( no onion garlic) style.
