Homemade Chole Masala

Chole Bhature, Kale Chole, Pindi Chana, Chana Masala etc. You must be knowing what is common among all, Yes!! "Chole" (Chickpeas) you guessed it right, but another aspect of all this preparation is its masala. Chole Masala is an important ingrediant to all the Chickpeas recipes, without this masala, you won't feel the taste and aroma of Chole preparations. Though Masala is readily available at all hyper/supermart but isn't that good to have homemade chole masala.

Ingredients

  • Coriander Seeds  1/4 cup
  • Cumin Seeds  1/4 cup
  • Fennel Seeds  1 tsp
  • Clove  1 tsp
  • Pepper Corns  2 tsp
  • Shah Jeers  1tsp
  • Black Cardamon  2
  • Dalchini  2 inch
  • Mace (javitri) 1
  • Kasuri Methi  2 tsp
  • Turmeric Powder  1 tsp
  • Dry red chilli  6 - 7 
  • Amchur Powder 2 tsp
  • Amla Powder 1 tsp (opt)

Directions

Chole Masala - Perfect blend of different spices, some are roasted few are grinded to make most of your chole recipe
  • Heat a pan and dry roast all the raw spices except Turmeric, Kasuri methi, Amchur powder for 4 - 5 minutes.
  • Turn off the flame and let it cool down.
  • Now add all the roasted spices to the grinding jar along with turmeric powder, Kasuri methi, amchur powder and make a fine powder. Your homemade chole masala is ready!!

Instant Kitchenette Tip

  • While making Chole add anardana powder, it will enhance the flavour.
  • Add amla powder to your chole masala it will give a good dark colour to your Chole.
