Corn Kofta In Spinach Gravy
Koftas are vegetable balls usually found in the Indian Sub-Continent, made with freshly grated or mashed vegetables. The Corn is a healthy way to make Kofta in Spinach gravy. Both are made for each other not only in taste but also in texture. Spinach is iron-rich along with controlling blood sugar level, while Corn provides you with Vitamin B12 and folic acid, this recipe is definitely a healthy option to have on your dining table.

Ingredients
For Kofta
- Boiled Corn 1/2 cup (crushed )
- Boiled Potatoes 1 cup (2 medium)
- Paneer 2 - 3 tbsp
- Coriander Powder 1/2 tsp
- Cumin Powder 1 tsp
- Garam Masala 1/2 tsp
- Green Chillies 2 chopped
- Fresh Green coriander
- Cornflour 1/4 cup
- Oil for frying
- Salt to taste
For Gravy
- Spinach/Palak 1 bunch (blanched and pureed)
- Green Chillies to taste
- Ginger 1 inch grated
- Tomatoes 2 medium chopped
- Onion 1 big chopped
- Turmeric Powder 1/2 tsp
- Red Chili Powder 1 tsp
- Coriander Powder 1 tsp
- Garam Masala 1/2 tsp
- Bay Leaf
- Cumin Seeds 1 tsp
- Ghee/ Oil
- Salt as required
- Fresh Cream 1 - 2 tbsp
Directions
Kofta
- In a mixing bowl add corns, mashed potatoes, paneer, ginger, green chillies, coriander, cumin powder, garam masala, cornflour, salt and mix everything together.
- Divide the mixture into equal portions and into small balls.
- Now heat sufficient oil in a kadhai/pan and deep fry the balls till golden brown, drain on absorbent paper. keep aside.
Gravy
- Heat 1 tbsp oil/ ghee in a pan/kadhai, add cumin seeds, bay leaves and roast for few seconds.
- Add chopped green chillies onions saute till it turns translucent, now add ginger, tomatoes, salt, turmeric coriander powder and cook till the masala is properly cooked and releases oil.
- Add spinach puree and water (as required) to adjust the consistency, stir and bring it to boil.
- Add cream and mix. Add fried koftas, garam masala and mix well.
- Adjust the seasoning and simmer for another 2 - 3 minutes. Corn Kofta in Spinach Gravy is ready!!
Instant Kitchenette Tip
- Always add kofta to the gravy right before serving.
- Instead of water, you can add milk to the gravy to make it richer in taste.
