Fantastic Fritters

Fritters are everybody's favorite, crispy and tasty. In India, they are known as Pakoda, often made with a variety of ways and ingredients, but common is besan or gram flour.
Vegetables such are onion, potato is common for fritters, but fritters are also made of brinjal, Spinach, corn, cabbage, and cauliflower etc.

Palak (spinach) Fritters

  • Preparation Time 5 - 7 minutes
  • Cooking Time 5 - 7 minutes
  • Course Snacks 

Ingredients

  • Gram Flour (besan) 1/2 cup
  • Spinach leaves washed 
  • Rice Flour  2 tbsp
  • Turmeric Powder  1 tsp
  • Red Chilli Powder to taste
  • Carom Seeds  1/2 tsp
  • Chat Masala  2 tsp
  • Green Chillies to taste (opt)
  • Fresh Coriander 2 - 3 tbs
  • Oil for frying
  • Water as required

Directions

Palak Pakoda - Crispy and tasty leafy palak fritters
  • In a mixing bowl add besan, rice flour, turmeric powder, chat masala, carom seeds, coriander powder give all of them a good mix.
  • Add water now make a paste-like consistency (not dripping).
  • Take spinach leaves dip them in the gram flour paste and shallow fry them on medium to low flame till they become crisp and golden.
  • Enjoy with fresh coriander chutney or dip of your choice.

Green Onion Fritters

Ingredients

  • Fresh Green Onion 500 gms (washed and finely chopped)
  • Fresh Green Chillies  5 - 7 Chopped
  • Ginger 1 inch chopped
  • Fresh Green Coriander 1/4 cup
  • Gram Flour  1cup
  • Rice Flour  2 tbsp
  • Carom Seeds 1 tsp
  • Chat masala 1 tsp
  • Turmeric Powder 1tsp
  • Asafoetida 1 pinch
  • Water 1/2 cup or as required
  • Oil for frying

Onion Pakoda - are the most popular fritters, this fritter you will also find in road side stall, the crispy and tasty taste of these fritter will blow you away


  • In a big mixing bowl add chopped green onions, green chilies, chopped ginger, fresh coriander, gram flour, rice flour, carom seeds, turmeric powder, chat masala, asafoetida, and salt to taste give a good mix and leave it for 3 - 4 minutes so that green onions can release water.
  • Now after 3 - 4 minutes start adding water in small batches, we have to make a thick mixture of this. let it sit for 2 minutes
  • Meanwhile, heat oil in a pan and fry small portions of the mixture in medium hot oil, and fry them until golden brown.

Instant Kitchenette Tip

  • Add 1/4 tp of baking soda to the batter/mixture.
