Kimchi Salad

Kimchi salad is traditional Korean salad, it tastes sweet and salty with loads of fermented vegetables. The vegetables includes cabbage, carrot, reddish in general. Kimchi salad tastes depends upon the types of seasoning you are using, the various selection includes onion/garlic or spring onion ginger garlic, some recipes also uses generous amount of herbs.
This recipe is simple and easy to find ingrediant that is available either at home or in local market places.

Ingredients

  • Normal Cabbage 1 cut into cubes (4 cups)
  • Water 1/2 cup
  • Salt 2 tbsp
  • Onion  1 medium size 
  • Garlic  10 cloves 
  • Ginger  1 inch
  • Salt 1/2 tsp
  • Sugar 2 - 3 tsp
  • Soya Sauce  1 tbsp
  • Vinegar  1/4 cup
  • Kashmiri Red Chilli Powder 2 tbs tsp
  • Carrot 1/2 cup Julian
  • Spring Onion 1/4 cup chopped

Directions

Kimchi, a staple in Korean cuisine, is a traditional side dish of salted and fermented vegetables.

  • Take the cabbage in a mixing bowl pour 1/2 cup of water over the cabbage add 2 tbsp of the salt mix very well so that all the cabbage is properly covered with the salt and water, once it is mixed well keep it aside for 2 hours, toss it every 30 minutes.
  • In a mixing jar add onion, ginger, garlic, sugar, salt, soya sauce, vinegar, and make a fine paste.
  • After 2 hrs you will see your cabbage releases a lot of water wash all the cabbage under running water and make sure that all the salt is out of the cabbage, rub the cabbage gently to get rid of all the salt and drain it.
  • Now add Kashmiri red chilli powder to your ground onion paste mix well.
  • In another big mixing bowl add washed and drained cabbage, spring onion, julian carrot and the chilli paste and mix everything very well, you can use your hands also to mix this really well. make sure all the cabbage is well coated with the paste.
  • Now leave this to ferment for 24 hrs in an airtight container, then shift this into the refrigerator. 

Instant Kitchenette Tip

  • Add sesame seeds for health benefits.
  • The longer you get it to stay to ferment the stronger it gets in flavour.
  • You can also add chilli flakes to enhance the heat.
  • I used dark soya sauce because it was available at my home you can use regular soya sauce.
