Malpua
Indian Pancake served as dessert also known as 'Malpua'. Originated from Northern India, this preparation traditionally made during festivals or family functions, you will find Malpua all over India with a little variation here and there, but what remains intact is the taste of Malpua soaked in cardamom essenced sugar syrup. Ingredients
- All-Purpose Flour 1 cup
- Milk Powder 3 - 4 tbsp
- Sooji/Rawa 1 tbsp
- Sugar Powder 2 tbsp
- Milk as required
- Fennel seeds (crushed) 1 tsp
- Green Cardamom Powder 1/2 tsp
- Ghee as required
- Sugar 1 cup
- Water 3/4 cup
- Saffron a pinch
Directions
- In a bowl mix maida, milk powder, sooji, fennel seeds sugar and add milk in small batches to make a semi-thick smooth batter. let it rest for 5 - 7 minutes
- Meanwhile, add 1 cup of sugar and 3/4 cup of water to a pan and cook on medium to low flame to make a thick syrup (Ek taar ki chashni).
- In 7 - 8 minutes, your sugar syrup will be done, add a pinch of saffron, and cardamom to the syrup and keep aside.
- In a pan add ghee/clarified butter heat on low to medium flame, add 1 big spoonful of the maida mixture just like pancakes, and fry them till turns golden.
- Now put the malpuas in the sugar syrup and soak it for 1 - 2 hours. Serve it on a plate and garnish it with pistachios.
Instant Kitchenette Tip
- You can add khoya also but milk powder is the best alternative to khoya and give a similar flavour.
