Pav Bhaji In Fondue Style

Pav Bhaji is Indian fast food (street food) dish that originated in Maharashtra (Mumbai). It is a, widely loved street food. Pav Bhaji is a spicy blend of different vegetables in an onion tomato gravy which is served with a roasted buttery pav. I am giving this dish a twist here and presenting you a recipe which I tried the first time in a restaurant and since then Whenever I have friends at home or when I am lazy to cook an entire meal for my family, "Pav Bhaji in Fondue Style" is one of the first few dishes which comes to my mind, as it is quick and easy to make.

Ingredients

  • Potatoes  500 gms 
  • Cauliflower 2 - 3 florets
  • Carrots 1
  • Green Peas  100 gms
  • Tomatoes  250 gms finely chopped
  • Salt to taste

For Masala

  • Butter  200 gms
  • Onions 200 - 250 gms
  • Capsicum 1 small finely chopped
  • Ginger-Garlic  1 tbsp
  • Red Chilli Powder 1 -2 tsp
  • Pav Bhaji Masala  3 tbsp
  • Kashmiri Red Chilli Powder 1 tsp
  • Garam masala 1 tsp
  • Oil 1 -2 tbsp
  • Lime Juice 1 tbsp
  • Fresh Coriander 
  • Water as required
  • Pav to serve

Directions

  • Add roughly chopped potatoes, cauliflower, chopped carrot, peas in a pressure cooker, add water and pressure cook till 4 - 5 whistles.
  • Make sure that the vegetables get mushy.
  • In a pan/kadhai heat 1 tbsp of oil and 2 tbsp of butter.
  • Add chopped onions and saute for a minute, now add ginger-garlic paste and saute till the onion changes colour.
  • Add tomatoes and cook for 4 - 5 minutes, now add Kashmiri chilli powder, red chilli powder and mix well.
  • Now add the boiled vegetables, mix and mash with the help of a potato masher.
  • Add water little by little for that perfect consistency.
  • Add pav bhaji masala in two batches, half while cooking and the other half when the bhaji is cooked.
  • Now add salt and butter and cook well for 5 - 6 minutes.
  • Finish the bhaji with the left out pav bhaji masala, lime juice and fresh coriander. and turn off the flame.
  • Now in normal pav bhaji recipe at this point, you will toast the pav in butter and it's ready to serve, but here I am giving this a twist, so here is the easy and new way
  • Chop all the pav buns into cubes and toss it in a pan with 1 - 2 tbsp of butter and sprinkle 1 tbsp of pav bhaji masala, and a little salt if you want you can toast in an oven for 10 minutes with some butter, and pav bhaji masala. The dish is ready to serve!!

  • Use tamarind juice instead of lime juice, it's a game-changer.
