Shakarpara

Shakarpaare is a tea-time snack that is also made during festivals like Holi, Diwali. It's like a sweet treat made with all-purpose flour and sugar syrup. This snack is very addictive and you can't stop eating it. The Shakarpara or Methe Khurma is a popular snack in western and northern India, tastes like crispy cookies.
You will see a variety of shapes in my image it's because my daughter finds square shape Shakarpara tastier than the diamond ones. So here is my recipe for Shakarpara hope you will also find it as quick and easy as I do.

  • Preparation Time 20 minutes

Ingredients 

  • Sugar  1 cup
  • Water  1 cup
  • Ghee/Clarified Butter  1/2 cup
  • Fennel Seeds  1 tsp crushed
  • Flour 2.5 cups
  • Baking Soda 1 pinch
  • Salt a pinch
  • Ghee/Oil for deep frying

Directions

Shakarpara - Meetha Khurma made from refine flour and deep fried and submerged in sugar syrup, makes them super snack that tasty and crispy
  • Take sugar, water and put them to a boil.
  • Mix well and wait till all the sugar dissolves.
  • Add ghee and let the syrup boil for another 2 - 3 minutes on low flame
  • After 2 - 3 minutes turn off the flame and let it cool down completely.
  • In a big mixing bowl add the sugar syrup, add crushed fennel seeds, a pinch of salt, and a pinch of baking soda.
  • Add enough flour to knead a soft dough. It took approximately 2.5 cups of flour to combine well.
  • Now take a big portion of the dough and roll into 2'mm thick roti/chapati.
  • Cut them into small square or diamond-shaped pieces.
  • Deep fry them on medium flame until golden in color.
  • Once done take off them on an absorbent kitchen towel. cool them and store them in an air-tight container.

Instant Kitchenette Tip

  • These shakarpare are very mildly sweet, to add more sweetness you can coat them in sugar syrup also. just dip them directly into the sugar syrup once they are out from the kadhai.
