Taheri - Awadh Special
Awadhi Taheri
A classic aromatic delicacy from Awadhi cuisine. The mouth-watering flavors in this dish are mildly spicy and perfectly fragrant. This aromatic Taheri is an adaptation of another popular Indian dish "Veg Pulao". It's a one-pot wholesome meal quick meal.
Taheri can either be made with vegetables or meat. This recipe of veg taheri uses a blend of vegetables like cauliflower, carrots, potatoes, and green peas. Flavorful, healthy, and perfect for mid-week lunch. Pair it with raita and fresh green chutney or Mirchi ka salan.

Ingredients
- Basmati Rice 1 cup (pre-soaked for 30 minutes)
- Onion 1 big sliced
- Ginger Garlic Paste 1 tbsp
- Tomato 2 medium sliced
- Potatoes 1 medium cut into cubes
- Carrot 1/2
- Green Peas
- Cauliflower
- Paneer (opt)
- Soya Chunks (opt)
- Bay Leaf
- Green Cardamom
- Cloves
- Star Anise
- Cumin Seeds
- Black Cardamom
- Cinnamon Stick
- Black Pepper Corns
- Ghee/ Oil 2 - 3 tbsp
- Salt to taste
- Turmeric Powder 1 tsp
- Red Chili Powder to taste
- Garam Masala 1/2 tsp
- Water 1.5 cups
- Fresh Coriander handful
Directions
- Add 2 tbsp of oil in a pressure cooker, then add all the raw spices saute till they turn aromatic.
- Now add sliced onions and cook until brown, add ginger-garlic paste and cook for a minute.
- Add chopped tomatoes cook until softens.
- Add turmeric powder, red chili powder and cook for another 1 minute, add 1 -2 tbsp of water if required.
- Add chopped veggies and give a good mix.
- Add rice saute for few seconds then add 1.5 cups of water, salt to taste, garam masala, and cover the pressure cooker with the lid and cook for just 1 whistle on high flame. turn off the flame and let the pressure settle.
- Finish the dish with chopped fresh coriander. Serve Hot with Clarified butter or Desi ghee on the top!!
Instant Kitchenette Tip
- Use paneer and soya chunks to make it healthier.
- The ratio of water in Taheri is very important, water has to be always less than the double amount of rice you take, then only you will get the rice fluffy.
