Tomato Rice

Tomato Rice - One-pot meal

Simple quick and easy to make Tomato rice. It's so flavourful and so delicious, made with simple ingredients which are always present in an Indian kitchen. This wonderful spicy, tangy rice takes less than 30 min to get it on your dining table. Mostly enjoyed in the southern part of India though it equally cooked in every part of the country.

Ingredients

  • Long grain basmati rice  2 cups boiled and fluffy
  • Onion 1 large chopped
  • Ginger 1 inch grated or chopped
  • Tomatoes  4 medium chopped
  • Mustard Seeds 1 tsp
  • Cumin Seeds  1 tsp
  • Asafoetida 1 pinch
  • Curry leaves
  • Roasted Chana Dal  1 tsp
  • Roasted Urad Dal 1 tsp
  • Dry Red Chilies
  • Turmeric Powder 1 tsp
  • Kashmiri Red Chili Powder 1 tsp
  • Garam Masala (opt) 1/2 tsp
  • Green chilies (opt)
  • Salt to taste
  • Clarified Butter or Ghee 2 - 3 tbsp
  • Coriander for garnishing

Directions

Simple quick and easy to make Tomato rice. It's so flavourful and so delicious, made with simple ingredients which are always present in an Indian kitchen.
  • In a pan/kadhai add butter/ghee once it turns hot add mustard seeds, cumin seeds, urad dal, chana dal, asafoetida, and roast for a minute or till it gets aromatic. 
  • Next add ginger, curry leaves, dried red chilies, sliced onions, and saute for 4 - 5 minutes or until onions turn translucent and soft.
  • Now add chopped tomatoes, green chilies, and salt. Now cover the lid and cook till the tomatoes turn soft.
  • Ad d turmeric powder, Kashmiri red chili powder, and garam masala mix well and cook for another 2 - 3 minutes.
  • Once done add the boiled rice and mix till everything is well combined.
  • Lastly, garnish with fresh coriander leaves. Serve hot!

Instant Kitchenette Tip

  • You can make this dish with leftover rice.
  • Always add salt while making rice.
  • This is one of the best options for kids tiffin.
