Eggless Cashew Vanilla Cake in Cooker
A Classic Eggless Vanilla cake recipe made completely in a pressure cooker, Vanilla cake one of the common cake recipe that you make for any occasion, but this one is a little different as the cake is made without a conventional or microwave oven, this cake recipe is easy and simple and you can easily decorate a simple cake with icing sugar and edible flower to make it more tempting.
Ingredients
- Maida/ All-Purpose flour 1.5 cup
- Milk 1 cup
- Butter 3 tbsp
- Vegetable oil 3 tbsp
- Vinegar 1.5 tsp
- Vanilla Essence 1 tsp
- Powdered Sugar 1/3 cup
- Condensed Milk 3/4 cup
- Cashew chopped 4 - 5 tbsp
- Baking Powder 1.5 tsp
- Baking Soda 1/2 tsp
- Salt 1 cup for baking in cooker/pan
Directions
- Add 1 cup of salt to a pressure cooker/pan and place a wire stand in the bottom. close the lid, remove the whistle and let it heat in medium flame for 10 - 15 minutes.
- Take 1 cup of milk at room temperature, add vinegar, vanilla essence stir and keep aside.
- In a large mixing bowl add butter, oil, powdered sugar, and condensed milk, and give this mixture a good mix for 2 - 3 minutes until thick and slightly fluffy.
- Sieve all-purpose flour, baking soda, and baking powder into the butter mixture.
- Add milk and whisk to ensure that there are no lumps. the batter should be of coating consistency.
- Add chopped cashew to the batter.
- Take a baking tin grease with butter or you can use butter paper.
- Pour the cake mixture into the cake tin.
- Add some cashews over the top of the mixture and place the cake tin carefully inside the cooker using tongs and close the lid.
- Adjust the heat to medium-low and bake for 30 - 35 minutes without a whistle.
- Check the cake with a toothpick by poking it in the center, if it is clear take the cake tin out.
- Let it cool down completely then unmould the cake and enjoy!
Instant Kitchenette Tip
- Instead of cashew, you can also add walnuts, tutty-fruity, or choco chips.
- If you are making this cake in OTG bake it at 165- 170*C for 30 - 35 minutes.
