Meethi Seviyan / Sweet Vermicelli Pudding / Sheer Khurma

Meethi Seviyan or Sweet Vermicelli is a sweet dessert made with vermicelli, ghee, sugar, dry fruits, and cardamom. A perfect one-pot sweet dessert that can be made in just 15 - 20 minutes. This is my favorite recipe of Meethi Seviyan that I have learned from my mother. On this auspicious occasion of Raksha Bandhan sharing it with my extended family on Social Media.

Ingredients

  • Full Fat Milk 1 lit
  • Sevaiya 1/4 cup
  • Condensed Milk 1/2 can
  • Whole elaichi pods 2 - 3
  • Mixed Dry fruits cashew, almonds raisins
  • Ghee 2 tbsp

Directions

Seviyan, a vermicelli pudding. It’s a classic sub-continent sweet that emerges every Festival, so it’s only fair that it’s one of the first desserts that everyone learn to make.
  • In a deep bottom, pan start boiling full-fat milk at medium flame, add crushed elaichi pods, and slowly bring it to boil.
  • Let it simmer till it reduces a little and then add condensed milk to it and allow it to simmer more.
  • In another pan, heat ghee, and fry the fixed nuts/dry fruits. keep aside.
  • In the same pan, add the crushed Seviyan to the leftover ghee and toast till golden brown.
  • Add this toasted Seviyan, and fried nuts to the simmering milk, and let all the ingredients amalgamated well while constantly stirring.
  • Do not let it thicken too much as even after it's cool, it will thicken further.
  • Turn off the flame and pour the meethi Seviyan into the serving bowl, garnish with some nuts, and celebrate the moment with joy.

Instant Kitchenette Tip

  • You can add sliced dates to the Seviyan to enhance the flavour.
  • If you do not want to use full-fat milk add 2tbsp of milk powder to the regular milk it will give you the same flavour.
