Leftover Ka Makeover - Rajma Ke Kabab
People can be iffy about leftovers and... to be honest it can be hard to get excited about the idea of heating up a meal from yesterday or the day before and enjoying it all over again.
Today I am here with a delicious snack Rajma ka kababs that is made of leftover masala rajma, some veggies, and spices. These rajma kababs have a firm texture and do not melt in the mouth like vegetarian galouti kababs. They make for a nice evening snack for kids or can feature in your starter menu for parties or even everyday lunches or dinners. Let's start with the recipe.
Ingredients
- Leftover Boiled Rajma 2 cups
- Boiled Potatoes 2 medium
- Onion 1 medium chopped
- Ginger-Garlic paste 1 tbsp
- Green Chilies to taste
- Fresh Coriander handful
- Roasted Gram flour 4 - 5 tbsp
- Cumin Powder 2 tsp
- Kabab Masala 2 tbsp (opt)
- Garam Masala 1 tsp
- Red Chili Powder 1 tsp
- Rock Salt 1 tsp
- Salt to taste
- Oil for shallow frying
Directions
- Grate boiled potatoes and grind the boiled rajma and mix them together.
- Add green chilies, ginger-garlic paste, fresh coriander, chopped onions, and all the dry ingredients mix them together.
- Add roasted besan and mix well.
- Now apply some oil to your palm and give the mixture ball a shape round or oval. I rolled it over on a skewer.
- Preheat a non-stick pan spread 2 tbsp oil place the cutlets on the pan to fry them on medium flame until they are golden brown from all the sides.
- Serve hot with your favorite dip/chutney.
