Leftover Ka Makeover - Rajma Ke Kabab

People can be iffy about leftovers and... to be honest it can be hard to get excited about the idea of heating up a meal from yesterday or the day before and enjoying it all over again. 

Today I am here with a delicious snack Rajma ka kababs that is made of leftover masala rajma, some veggies, and spices. These rajma kababs have a firm texture and do not melt in the mouth like vegetarian galouti kababs. They make for a nice evening snack for kids or can feature in your starter menu for parties or even everyday lunches or dinners.  Let's start with the recipe.

Ingredients

  • Leftover Boiled Rajma 2 cups
  • Boiled Potatoes 2 medium
  • Onion 1 medium chopped
  • Ginger-Garlic paste  1 tbsp
  • Green Chilies to taste
  • Fresh Coriander handful
  • Roasted Gram flour  4 - 5 tbsp
  • Cumin Powder  2 tsp
  • Kabab Masala 2 tbsp (opt)
  • Garam Masala 1 tsp
  • Red Chili Powder 1 tsp
  • Rock Salt 1 tsp
  • Salt to taste
  • Oil for shallow frying

Directions

  • Grate boiled potatoes and grind the boiled rajma and mix them together.
  • Add green chilies, ginger-garlic paste, fresh coriander, chopped onions, and all the dry ingredients mix them together. 
  • Add roasted besan and mix well.
  • Now apply some oil to your palm and give the mixture ball a shape round or oval. I rolled it over on a skewer.
  • Preheat a non-stick pan spread 2 tbsp oil place the cutlets on the pan to fry them on medium flame until they are golden brown from all the sides. 
  • Serve hot with your favorite dip/chutney.

Instant Kitchenette Tip

  • Use Butter/ Clarified butter to add extra punch in flavour.
